Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts (cut into bite-size pieces)
  • 1 tbsp olive oil
  • 12 oz penne pasta (cooked and drained)

  • 1 cup sour cream
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups baby spinach
  • Fresh basil
  • Extra parmesan

Directions

  1. Cook penne according to package directions, reserving 1 cup pasta water before draining
  2. Heat olive oil in a large skillet over medium-high heat
  3. Season chicken pieces lightly with salt
  4. Cook chicken for 6 to 7 minutes, stirring occasionally, until cooked through
  5. Remove chicken and set aside
  6. In the same skillet reduce heat to medium
  7. Add garlic and cherry tomatoes and cook for 2 minutes

  9. Reduce heat to low and stir in sour cream until smooth
  10. Return chicken to the skillet along with drained pasta and spinach
  11. Toss everything together adding a splash of pasta water if sauce needs loosening
