Peppercorn Parmesan Baked Cod

Peppercorn Parmesan Baked Cod

There's something special about a perfectly baked cod fillet—crispy on the outside, tender and flaky on the inside. This recipe brings together the bold, peppery kick of Cousin Tony's ™ Peppercorn seasoning with the nutty richness of Parmesan cheese for a dish that's elegant enough for dinner guests but simple enough for a weeknight meal.

Why This Recipe Works

Cod is a lean, delicate white fish that pairs beautifully with bold seasonings. The peppercorn blend adds depth and complexity without overpowering the natural flavor of the fish, while the Parmesan crust creates a golden, savory coating that locks in moisture. Together, they transform a humble fillet into something restaurant-worthy.

Serving Suggestions

This baked cod pairs wonderfully with roasted vegetables like asparagus, broccoli, or Brussels sprouts. A simple side salad with a light vinaigrette or creamy mashed potatoes rounds out the meal perfectly. For a lighter option, serve alongside quinoa or brown rice.

Chef's Tips

Don't skip patting the cod dry—moisture is the enemy of a crispy crust. If your fillets are particularly thick, you can tent them loosely with foil for the first few minutes of baking to ensure they cook through without the topping burning. For extra flavor, add a squeeze of fresh lemon juice directly onto the fish before topping.
