Ingredients
- 1 1/2 lbs ground pork
- 1 tbsp olive oil
- 1 lb baby potatoes (halved)
- 1/2 cup diced onion
- 3 cloves garlic (minced)
- 1/2 cup diced bell pepper
- 1 packet Cousin Tony's ™ Peppercorn Parmesan Dip and Cheeseball Mix
- 1/2 cup sour cream
- 1/4 cup chicken broth
- Shredded parmesan
- Fresh chives
Directions
- Heat olive oil in a large skillet over medium-high heat
- Add halved potatoes cut-side down and cook undisturbed for 6 to 7 minutes until golden brown
- Flip and cook another 3 minutes
- Remove and set aside
- In the same skillet cook ground pork over medium-high heat, breaking it apart, until browned about 7 minutes
- Drain excess fat
- Add onion, bell pepper, and garlic to the pork
- Cook for 3 minutes until softened
- Stir in Cousin Tony's Peppercorn Parmesan mix and chicken broth
- Reduce heat to low and stir in sour cream
- Return potatoes to the skillet and toss to coat
- Top with shredded parmesan and fresh chives
