Jalapeño Cheddar Beef Stuffed Peppers

Jalapeño Cheddar Beef Stuffed Peppers

There's something special about a dish that brings bold flavors and comfort food together on one plate. Jalapeño Cheddar Beef Stuffed Peppers do exactly that—and when you add Cousin Tony's Jalapeño Cheddar seasoning to the mix, you're elevating a classic into something truly memorable.

This recipe starts with fresh bell peppers (we love a mix of red and yellow for color), hollowed out and ready to be filled with seasoned ground beef, creamy cheddar, and all the smoky, spicy notes that make our signature blend so craveable. The result is a dish that's restaurant-quality but surprisingly easy to pull together on a weeknight.

Why This Recipe Works

Stuffed peppers are the ultimate one-pan wonder. They're naturally portion-controlled, visually stunning, and they taste even better the next day. The Jalapeño Cheddar seasoning does the heavy lifting—you get authentic heat, sharp cheese flavor, and that perfect balance of spice without having to measure out a dozen ingredients. Plus, it's a crowd-pleaser that works for family dinners, meal prep, or impressing guests.

What You'll Need

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 tablespoons Cousin Tony's Jalapeño Cheddar seasoning
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper to taste
  • Optional: fresh cilantro or green onions for garnish

The Method

Start by preheating your oven to 375°F. Cut the tops off your peppers and remove the seeds and membranes—this is your canvas. In a large skillet over medium-high heat, brown the ground beef with the diced onion until cooked through, about 5-7 minutes. Drain any excess fat.

Stir in the cooked rice, half the cheddar cheese, the diced tomatoes (with their juice), and the Cousin Tony's Jalapeño Cheddar seasoning. Mix until everything is well combined and let it simmer for 2-3 minutes. Taste and adjust seasoning as needed.

Arrange your hollowed peppers in a baking dish and fill each one generously with the beef mixture. Top each pepper with the remaining cheddar cheese. Cover the dish with foil and bake for 25-30 minutes, until the peppers are tender. Remove the foil, add your garnish if using, and serve hot.

Make It Your Own

This recipe is flexible. Swap the ground beef for ground turkey or chicken if you prefer. Add black beans or corn to the filling for extra texture and nutrition. If you like things spicier, sprinkle a bit of fresh jalapeño on top before baking. Some folks love a splash of hot sauce mixed into the filling—go for it.

Jalapeño Cheddar Beef Stuffed Peppers are proof that bold flavors don't require complicated cooking. With Cousin Tony's seasoning doing the work, you're free to focus on what matters: a delicious meal and the people you're sharing it with.
