Ingredients

  • 1/2 block (4 oz) cream cheese softened
  • 1/4 packet Cousin Tony's Jalapeño Cheddar Dip and Cheeseball Mix
  • 3 tablespoons sour cream
  • 1–2 tablespoons water to thin
  • 1 lb ground pork
  • 3 medium russet potatoes diced small
  • 1 red bell pepper diced
  • 1/2 yellow onion diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper
  • 2 tablespoons vegetable oil
  • 4 fried eggs
  • Sliced green onions
  • Pickled jalapeño slices

Directions

  1. Beat cream cheese until smooth
  2. Stir in sour cream and Cousin Tony's Jalapeño Cheddar Dip and Cheeseball Mix
  3. Add water to reach a pourable consistency and refrigerate
  4. Heat oil in a large cast iron skillet over medium-high heat
  5. Add diced potatoes and cook undisturbed 5 minutes until beginning to crisp
  6. Add onion and bell pepper and cook 3–4 minutes until softened
  7. Push vegetables to the side and add ground pork
  8. Break up and cook until browned
  9. Season everything with cumin, paprika, salt, and pepper and stir together
