Jalapeño Cheddar Pork Chops

Jalapeño Cheddar Pork Chops

There's something about the combination of smoky pork, sharp cheddar, and the kick of jalapeño that just works. These Jalapeño Cheddar Pork Chops are the kind of dish that feels fancy enough for company but comes together in under 30 minutes on a weeknight. The beauty of this recipe is how the cheese melts into a creamy crust while the jalapeños add just enough heat to keep things interesting.

Start by patting your pork chops dry and seasoning them generously with salt and pepper. Heat a cast-iron skillet over medium-high heat with a bit of oil, then sear the chops for about 4 minutes per side until they develop a golden crust. This step locks in the juices and creates that restaurant-quality sear you're after.

While the chops are cooking, prepare your topping. Combine shredded sharp cheddar, diced fresh jalapeños, and a touch of cream or sour cream in a small bowl. If you prefer less heat, remove the jalapeño seeds before dicing. Once your pork chops are seared, top each one generously with the cheddar mixture and cover the skillet with a lid or foil. Lower the heat to medium and cook for another 5 to 7 minutes until the cheese is melted and bubbly and the pork reaches an internal temperature of 145°F.

The real magic happens when that melted cheddar mingles with the pork's natural juices, creating a sauce that's rich without being heavy. Serve these alongside roasted vegetables, rice, or a crisp salad to balance the richness. A squeeze of fresh lime juice over the top brightens everything up and complements the jalapeño beautifully.

This dish pairs wonderfully with bold flavors, so don't be shy with your seasonings. If you want to take it further, try adding a pinch of smoked paprika or cumin to the cheese mixture for extra depth. The key is letting the quality of your ingredients shine—good pork, real cheddar, and fresh jalapeños make all the difference.
