Ingredients

  • 4 cups corn kernels (grilled or frozen and thawed)
  • 1 package Cousin Tony's™ Mexican Spice Dip and Cheeseball Mix
  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded cotija or cheddar cheese
  • Chopped cilantro and lime, for topping

Directions

  1. If using frozen corn, char it in a dry skillet over high heat for a few minutes
  2. In a bowl, mix the cream cheese, mayonnaise, and dip mix
  3. Fold in the corn and shredded cheese
  4. Top with cilantro and a squeeze of lime
  5. Serve warm or chilled with tortilla chips
