Ingredients
- 4 cups corn kernels (grilled or frozen and thawed)
- 1 package Cousin Tony's™ Mexican Spice Dip and Cheeseball Mix
- 8 oz cream cheese, softened
- 1/2 cup mayonnaise
- 1 cup shredded cotija or cheddar cheese
- Chopped cilantro and lime, for topping
Directions
- If using frozen corn, char it in a dry skillet over high heat for a few minutes
- In a bowl, mix the cream cheese, mayonnaise, and dip mix
- Fold in the corn and shredded cheese
- Top with cilantro and a squeeze of lime
- Serve warm or chilled with tortilla chips
